Asian Apple Chicken Salad


2 cups cubed cooked chicken breast
2 apples, cored and cubes
2 tbsp Natalie’s Pure Lime Juice
2 tbsp Natalie’s Orange Juice
1.5 tbsp light sesame oil
1 tbsp light soy sauce
1 tbsp mirin
1 tsp ginger
1/4 cup chopped parsley
1/4 cup chopped fresh cilantro
3 scallions, thinly sliced
baby spinach


1. Put the chicken and apples in a large bowl.
2. In a small bowl mix together the Natalie’s Pure Lime Juice, Natalie’s Orange Juice, oil, soy sauce, mirin, and ginger.
3. Pour over the chicken mixture.
4. Sprinkle parsley, cilantro and scallions over the top.
5. Gently toss to mix.
6. Cover and refrigerate up to several hours, if desired.
7. Serve over spinach on individual platters.
