Orange Pineapple Avocado Salad

Ingredients

2 avocados, sliced
4 cara cara oranges, peeled and thinly sliced
¼ red onion, thinly sliced
¼ cup pine nuts
½ Tbsp poppy seeds
4 Tbsp Orange Pineapple Juice
1 Tbsp dijon mustard
½ Tbsp balsamic vinegar
1 Tbsp honey
Pinch of sea salt for garnish

Directions

1. Prepare the dressing by combining the Orange Pineapple juice, poppyseeds, dijon mustard, balsamic vinegar, and honey. Whisk well
2. Arrange the sliced avocado, oranges, and red onion in a serving bowl and top with pine nuts.
3. Pour the dressing over the salad right before serving.
