Autumn Salad with Lemon Cranberry Vinaigrette
4 tbsp Natalie’s Lemon Juice
4 tbsp olive oil
1 tsp salt
½ tsp pepper
1 tsp fresh thyme leaves
2 tbsp dried cranberries
7 cups spinach
2 cups butternut squash cubes, roasted or steamed
1 apple, sliced
½ cup blue cheese
¼ cup dried cranberries
1. In a blender cup combine all dressing ingredients and blend for 15-20 seconds.
2. In a large bowl add the spinach and top with the butternut squash, apple, cranberries, and blue cheese. Toss well.
3. Dress with the salad dressing right before serving.
